For
some reason I have been on a scone kick lately. As a way to get
through the daily grind, I usually treat myself once a week to a coffee
and a grab-n-go breakfast.
While oatmeal is my usual food of choice, lately I have been leaning
towards scones. Some of my favorites are the raspberry white chocolate
scone from Caribou Coffee or the blueberry scone from Starbucks. These
are both great choices as they are large, pillowy,
sweet and overall delicious! While I enjoy eating them, prior to
November of this year, I had never tried making them myself. For my
first attempt I wanted to recreate the Caribou Coffee raspberry white
chocolate scone. I went to the store to buy the necessary
ingredients and was not able to find raspberries, so I made the choice
on the spot to replace them with blackberries. While at the time I
thought this was a great option, it turns out that if you are not
careful when folding the berries into the dough, the
scones will come out purple. Now, this would have been fine for
Halloween, but my plan was to give them to my sister and brother-in-law
who were recently going through a hard time dealing with the death of a
good friend. Needless to say, I was a little embarrassed
when I handed over the purple scones as a gift. Even though I was not
pleased with the outcome, my sister was very gracious and said they
tasted great. So, here is my second attempt at scones. I’m hoping to
redeem myself this time by sticking to dried cranberries
so that these babies won’t turn out red (even though that would be
festive for this time of year). Enjoy!
